Easy Slow Cooker Chipotle Pulled Pork for Busy Weeknight Dinners

When life is busy, and you have a million things on the go, it can be overwhelming to create healthy dinners to feed your family. One of my favourite things about raising pork is how easily it fits into so many different flavour profiles. That means I can make a staple like pulled pork more often and change out the flavours to switch things up. If you’re looking for a satisfying dinner that won’t take hours in the kitchen, you’re in the right place. Today, I’m sharing my favorite pulled pork recipe using chipotle peppers in adobo sauce. This dish is easy to prepare and full of flavor, making it a perfect choice for those hectic evenings and leaving you free to tackle your day.


The Wonders of a Slow Cooker


Slow cookers are fantastic for a reason. They transform less expensive cuts of meat into tender, flavourful dishes with minimal effort. Cooking your pork shoulder on low heat for six to eight hours allows the flavours to meld perfectly, giving you restaurant-quality pulled pork right at home without spending hours in the kitchen. Slow cookers are also great in the summer when you're feeling the heat and just don't want to turn on the oven. Simply toss everything into the slow cooker, and let it do all the hard work for you!

Chipotle Pulled Pork in the Slow Cooker

Ingredients You’ll Need


Before you get started, you will need the following ingredients:


  • 3 to 4 pounds of pork shoulder (you can buy our pasture-raised pork shoulder here.)

  • 2 Onions, sliced

  • 1/3 to 1/2 cup of Water

For the Sauce:

  • 1 can of Chipotle Peppers in Adobo Sauce

  • 1 tbsp. Smoked Paprika

  • 1 tbsp. Cumin

  • 8 Cloves of Garlic

  • 1/4 cup Brown Sugar

  • 1/4 cup Apple Cider Vinegar

  • 1/2 Onion, roughly chopped


    Optional: buns for serving and toppings like coleslaw, avocado, or pickled onions


With your ingredients ready, let's get cooking.


Prepping the Pork in the Slow Cooker


Blend all of the sauce ingredients until smooth and set aside.

Pour your water into the bottom of your slow cooker. You want just enough to cover the bottom without watering down your flavours. Place your pork roast in the crockpot.


Pour your chipotle sauce over the top of your roast and cover as much surface areas as you can without losing too much down the sides and into your pot. Top the sauced roast with sliced onions and stuff any additional onions into the pot down along the sides of the roast.


Cooking Time


Set your slow cooker to low and let it cook for about 7 to 8 hours.. The longer it cooks, the more tender it will become. For perfect shredding, aim for an internal pork temperature of at least 190°F. Once done, shred the pork using two forks right in the slow cooker, mixing it with all those incredible juices.


Make It Saucy


I love to make a chipotle honey sauce with all of the juices in the crockpot. Scoop out two cups of the liquid and add it to a small saucepan. Whisk in 2 tbsp. of flour and let it thicken. If you'd like a runnier sauce add more liquid and if you'd like to thicken it up more add a little more flour. Once the consistency is where you'd like it add 2 tbsp. of honey. Voila! So tasty.


Once I've shredded my pork I toss it with my honey chipotle sauce making sure to add as many of the onions from the pot as I can fish out!


Serving Suggestions


  • Serve on toasted buns with coleslaw for a cool and crunchy contrast

  • Add fresh toppings like avocado andserve with soft tortillas for yummy, spicy tacos

  • Enjoy with a side of rice or beans.

The Dish that Keeps on Giving - How to Use Your Leftovers


If you're lucky enough to have leftovers, pulled pork is incredibly versatile. Use it in quesadillas, burritos, or even a hearty breakfast hash. An open faced pulled pork sandwich topped with a fried egg is pretty much the best thing I can put in my mouth hole! Store your leftovers in an airtight container and they’ll last in the fridge for up to 3-4 days.
